The Narrative

Kanso was born from a singular obsession: to find the absolute zero of sushi. Not minimalism for the sake of aesthetics, but for the sake of flavor.

Chef Sato began his apprenticeship at the age of 15 in Ginza. After two decades of rigid tradition, he sought to deconstruct the Edomae style to its fundamental physics. How the knife enters the fish. How the air interacts with the vinegar.

In 2018, he opened Kanso—Japanese for "simplicity"—as a rebuttal to modern excess. Here, there are no fusion rolls, no superfluous garnishes. Only the honest dialogue between the ocean, the grain, and the hand.
